How long can you freeze bread?

For best quality: 3–5 months. It remains safe beyond that — freezer time limits are about taste and texture, because bacteria cannot grow at -18°C.

How should I defrost bread?

Unlike meat or dairy, bread isn't a 'danger zone' food, so it doesn't need a careful fridge-only thaw. A whole wrapped loaf takes about 3 hours at room temperature; bread rolls take about an hour; individual slices thaw in under 30 minutes — or skip thawing altogether and go straight from freezer to toaster.

Can you refreeze bread?

Not once it's been defrosted raw and left uncooked — refreezing multiplies the time spent in the danger zone. The exception: you can freeze a cooked dish made from defrosted raw ingredients (defrosted raw mince → cooked bolognese → freezer is fine).

Does freezing kill bacteria?

No — it pauses them. Any bacteria present before freezing wake up on defrosting, which is why freshness going in and safe defrosting coming out both matter.

Does the type of bread change the freezing time?

Yes. Standard sliced and sourdough loaves keep well for the full 3 months. Enriched or gluten-free bread is more delicate — use it within about a month for the best texture. What's the best way to freeze a loaf so I don't waste it?

Slice it before freezing, and flip through the slices once so they separate rather than freezing into one solid block. That way you can pull out exactly the amount you need — a slice for toast, half a loaf for sandwiches — without defrosting the whole thing.
