A plain cake — sponge, fruit cake, un-iced or with buttercream — is low-moisture and sugar-dense, which keeps bacteria at bay; it's safe at room temperature for days in a tin. How long can cake actually stay out?

There's no real overnight limit here — cake keeps fine at room temperature, so just follow the best-before date and normal storage advice (cool, dry, covered).

When would cake become unsafe?

Visible mould is the clear signal to bin it. Otherwise deterioration is about quality — staleness or drying — rather than safety.

Should I refrigerate cake anyway?

Refrigeration can extend or reduce quality depending on the food (bread, for example, actually stales faster in the fridge). It isn't needed for safety.

Does hot weather change anything?

Heat speeds up quality loss and mould growth, so store cake somewhere cool and covered in summer — but the danger-zone rules for perishable food still don't apply here.

What's the difference between cake going off and just aging?
