Why overnight is too long

Cooked rice can contain spores of Bacillus cereus that survive cooking. At room temperature the spores germinate, and the growing bacteria produce toxins that are heat-resistant — no amount of reheating destroys them. This is why rice has the strictest handling advice of any common food: cool it within 1 hour, refrigerate, eat within 24 hours. Overnight on the counter, cooked rice is a genuine food poisoning risk ('fried rice syndrome') and must go in the bin.
