The bacteria behind the use-by system — listeria especially — don't announce themselves. Food can be dangerous while looking and smelling perfectly normal, which is exactly why the date exists.

Can I cook chilled dips thoroughly to make it safe after the date?

The FSA says no — don't cook or freeze food after its use-by date. Some bacterial toxins survive cooking, and the safe window has simply passed.

Can I freeze chilled dips to stop the clock?
