Why overnight is too long

Between 8°C and 63°C — the 'danger zone' — bacteria on food can double every 20 minutes or so. Overnight is 6–8+ hours in that zone, long enough for salmonella, E. coli or staphylococcus to reach dangerous levels. Worse, some bacteria produce heat-stable toxins as they grow, so reheating bolognese in the morning does not make it safe. It may look and smell completely normal; bin it anyway.

Can I reheat bolognese that was left out overnight to make it safe?

No. Reheating kills bacteria but does not destroy the toxins some of them produce while multiplying overnight. Food left out overnight can't be rescued by cooking.

It looks and smells fine — is it really unsafe?

Unfortunately the bacteria that cause food poisoning don't usually change how food looks, smells or tastes. 'It seems fine' is not a safety test.

What if the kitchen was cold overnight?

Unless the room was genuinely fridge-cold (below 8°C) all night, the 2-hour rule stands. A cool kitchen at 15°C is still well inside the danger zone.

How long can bolognese safely sit out?

Up to 2 hours at room temperature. After that, refrigerate it or bin it. In hot weather (above 32°C), cut that to 1 hour.
